We made these at one of our open days and they were a massive hit. A savoury muffin that's delicious on it's own or with some cucumber soup.
Ingredients
225g self-raising flour 100g courgette, grated 100g mature cheddar, grated 175ml milk 1 egg 55ml olive oil 10 cherry tomatoes salt and pepper
Method
- Preheat the oven to 200C/400F/Gas 6.
- Mix together in a bowl the flour, grated courgette, cheddar and seasoning.
- In a separate bowl mix together the egg, milk and olive oil together. Slowly add this to the dry ingredients making sure it's all mixed together well.
- Using muffin cases in a muffin tin, half-fill about 10 with the mix.
- Prick each cherry tomato so that it doesn't pop when its cooked, and press one in to the centre of each muffin.
- Fill up the muffin case with rest of the mixture and cook for about 20 minuties until golden brown.
