This is a great side dish to use up bumper harvests of sprouting broccoli and we think youll really appreciate the combination of flavours.
Serves 4
Ingredients
500g broccoli spears 2 cloves of garlic, crushed 225g streaky bacon 350g pasta (penne works well) 2 tbsp olive oil 85g chopped walnuts Parmesan
Method
- Cook the pasta as per the packet instructions.
- Trim and then wash the broccoli several times in cold water. Cook it gently in a steamer until done (we prefer it a little soft rather than crunchy as it mixes with the pasta better).
- In a large frying pan, heat the oil and fry the bacon until crisp. Just before it’s cooked add the garlic.
- Drain the pasta and then combine it with the bacon, garlic and broccoli.
- Serve and grate a little Parmesan over the top.
