While this recipe isn't so great on the waist line, after a hard day weeding in the garden we reckon this quick and easy recipe is a well deserved treat.
Ingredients
225g gooseberries, topped and tailed 600ml double cream 2 egg whites (optional) meringue nests 3 tbsp elderflower cordial
Method
- Place the goosberries in a pan with 50ml of water and bring to a simmer. Reduce the heat and cook until the fruit have soften to a thick puree. Remove from the heat and allow to cool.
- Whisk the cream until its thick and fluffy. Then whisk the egg whites until they form peaks.
- Crush the meringues into the cream and add the elderflower cordial. Fold in the eggs, if you are using them. Add the gooseberry puree and stir it once or twice to get the ingredients introduced. Don't over stir though!
- Dish up in to glass bowls and dig in.
