It may sound odd putting courgettes in a chocolate cake but they just help to keep it nice and moist. Plus it's a great way to use up a real courgette glut from the garden. This recipe came from a member of the team whose mum used to cook it for her birthday cake.
Ingredients
170g dark chocolate 200g plain flour 1 tsp baking powder 1/2 tsp bicarbonate of soda 1/4 tsp salt 110g caster sugar 2 large eggs, beaten 170ml vegetable oil 225g peeled weight of courgettes 50g chopped walnuts
Method
- Preheat the oven to 180C/350F.
- Grease and flour two sandwich tins ready for baking.
- Slowly melt the chocolate in a bowl over hot water.
- While you are going this sift all the dry ingredients in to a bowl and in a different bowl beat the oil and eggs together. Slowly combine the oil and egg mixture withe dry ingrients.
- Then grate your courgettes collecting all the juice, and add these to the above mixture.
- Add the melted chocolate and chopped walnuts to the mixture and divide it between the sandwich tins.
- Cook for 25-30 minutes.
- Once it's cooked and cooled, layer the cake with chocolate butter cream.
