Mangetout summer stir-fry

Serves 4

Ingredients

1 tablespoon of olive oil
350g mangetout peas
4 spring onions, coarsely chopped
1 clove of garlic, finely chopped
A handful of fresh mint, coarsely chopped
Sea salt
Black pepper, freshly ground

Method

  1. Heat the olive oil in a large frying pan or Wok and coat the sides.
  2. Add in the prepared mangetout, chopped spring onions and garlic.
  3. Season with salt and pepper.
  4. Stir-fry for three or four minutes, remove from heat and stir in the freshly chopped mint leaves.
  5. Garnish with a sprig of mint.
