Ingredients
1 tablespoon of olive oil 350g mangetout peas 4 spring onions, coarsely chopped 1 clove of garlic, finely chopped A handful of fresh mint, coarsely chopped Sea salt Black pepper, freshly ground
Method
- Heat the olive oil in a large frying pan or Wok and coat the sides.
- Add in the prepared mangetout, chopped spring onions and garlic.
- Season with salt and pepper.
- Stir-fry for three or four minutes, remove from heat and stir in the freshly chopped mint leaves.
- Garnish with a sprig of mint.
